Is there a way to create a widget on the flowmon dashboard to see a specific source for incoming / outgoing traffic (but not as aggregated traffic) ?

not by default. But you can create a custom chapter with profile channel filters that differentiate between input and output interfaces: https://docs.progress.com/bundle/progress-flowmon-os-12-5/page/topics/user-guide/Filter-Syntax.html
Then you can use this chapter in the desired dashboard.
